Prepare the Tofu: Start by pressing the tofu for at least 30 minutes to remove excess liquid. Once pressed, cut the tofu into nugget-sized cubes (about 1.5 inches).
Set Up Breading Stations: In three separate bowls, create your breading station: In the first bowl, mix the flour with 0.25 teaspoon of salt and 0.25 teaspoon of black pepper. In the second bowl, whisk together the plant milk, soy sauce, nutritional yeast, garlic powder, onion powder, and smoked paprika. In the third bowl, mix the panko breadcrumbs with the remaining salt and pepper.
Breading the Tofu: Take each tofu cube and coat it first in the flour mixture, then dip it into the plant milk mixture, and finally roll it in the panko breadcrumbs until fully coated. Place the breaded nuggets on a plate or baking sheet.
Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
Air Fry the Nuggets: Spray the basket of the air fryer lightly with cooking spray. Place the breaded tofu nuggets in a single layer in the basket (you may need to work in batches). Spray the tops of the nuggets lightly with cooking spray for an extra crispy texture.
Cook: Air fry the tofu nuggets for 12-15 minutes, flipping them halfway through, until they are golden brown and crispy.
Serve: Once done, remove the nuggets from the air fryer and let them cool slightly before serving. Enjoy these crunchy bites with your choice of dipping sauce, such as vegan ranch, BBQ sauce, or sweet chili sauce.
