Ingredients

4 boneless, skinless chicken breasts

4 tablespoons unsalted butter

3 tablespoons olive oil

2 teaspoons lemon pepper seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Salt, to taste

Black pepper, to taste

2 tablespoons fresh parsley, finely chopped (for garnish)

1 lemon, zest and juice

Optional: Lemon wedges for serving

Instructions

Prep the Chicken: Pat the chicken breasts dry with paper towels to remove any excess moisture. This helps achieve a good sear. Season both sides generously with salt, black pepper, garlic powder, and onion powder.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until shimmering. Make sure the oil is hot enough to sizzle when you add the chicken.

Sear the Chicken: Place the chicken breasts in the hot skillet without crowding (you may need to do this in batches). Sear for about 5-6 minutes on one side until golden brown. Do not move the chicken around to allow for a proper sear.

Add Herb Butter: Flip the chicken over and add the butter and lemon juice to the skillet. As the butter melts, use a spoon to baste the chicken with the melted herb butter for added flavor. Sprinkle the lemon pepper seasoning over the chicken during this process.

Cook Through: Continue cooking for an additional 5-7 minutes, or until the internal temperature of the chicken reaches 165°F (75°C). The butter should create a lovely sauce that coats the chicken.

Finish and Garnish: Once cooked, remove the chicken from the skillet and let it rest for 5 minutes. Meanwhile, add the lemon zest to the remaining butter sauce in the skillet, swirling to combine.

Serve: Plate the chicken, drizzle the herb butter sauce over the top, and garnish with fresh parsley. Serve with lemon wedges on the side.
