1 lb fresh green beans, trimmed

1 cup canned pumpkin puree (not pumpkin pie filling)

1 cup heavy cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

1 cup shredded sharp cheddar cheese

1 cup French fried onions

½ cup pecans, chopped

¼ cup grated Parmesan cheese

1 tablespoon olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Blanch the Green Beans: In a large pot of boiling salted water, add the trimmed green beans and blanch for 4-5 minutes until bright green and slightly tender. Drain and immediately rinse with cold water to stop the cooking process. Set aside.

      Prepare the Sauce: In a mixing bowl, whisk together the pumpkin puree, heavy cream, garlic powder, onion powder, thyme, salt, and black pepper until smooth and well combined.

        Combine Ingredients: In a large mixing bowl, toss together the blanched green beans, pumpkin sauce, and shredded cheddar cheese until the beans are well coated.

          Assemble the Casserole: Pour the green bean mixture into a greased 9x13 inch baking dish. Evenly spread the mixture in the dish.

            Top with Toppings: In a small bowl, mix the French fried onions, chopped pecans, and grated Parmesan cheese with olive oil until the mixture is well coated. Sprinkle this mixture evenly over the casserole.

              Bake: Bake the casserole in the preheated oven for 25-30 minutes, or until bubbly and golden brown on top.
