Warm Cheesy Pumpkin & Spinach Stuffing

1 cup diced white bread (preferably day-old)

1 cup fresh spinach, chopped

1 cup pumpkin puree (canned or fresh)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup diced onion

2 cloves garlic, minced

1/4 cup chicken or vegetable broth

1/4 teaspoon nutmeg

1/2 teaspoon dried sage

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

1 tablespoon butter

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Bread: In a large mixing bowl, combine the diced white bread with a drizzle of olive oil. Toss until the bread is lightly coated. Place it on a baking sheet and toast it in the oven for about 10 minutes, or until golden brown. Remove and let it cool.

      Sauté Aromatics: In a skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat. Add the diced onions and sauté for about 5 minutes, or until they become translucent. Add the minced garlic and cook for an additional minute until fragrant.

        Mix the Filling: To the skillet, add the chopped spinach and cook until wilted, about 2-3 minutes. Now, stir in the pumpkin puree, chicken or vegetable broth, nutmeg, sage, salt, and black pepper. Cook for another 2 minutes to combine flavors.

          Combine Ingredients: In the large mixing bowl with the toasted bread, add the pumpkin and spinach mixture and mix until well combined. Next, fold in the mozzarella cheese and half of the grated Parmesan cheese.

            Bake the Stuffing: Transfer the mixture into a greased baking dish. Sprinkle the remaining Parmesan cheese on top for an extra cheesy crust. Cover with foil and bake for 20 minutes.

              Finish Baking: After 20 minutes, remove the foil and bake for another 10-15 minutes or until the stuffing is bubbly and the top is golden brown.

                Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving warm.
