1 lb boneless, skinless chicken breast, thinly sliced

2 cups broccoli florets

1 bell pepper (any color), sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (low sodium preferred)

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 tablespoon sesame oil

1 teaspoon crushed red pepper flakes (optional)

Cooked jasmine or brown rice, for serving

Fresh cilantro or green onions, for garnish (optional)

Instructions
 

Prep the Chicken: In a bowl, combine the sliced chicken with 1 tablespoon of soy sauce, oyster sauce, and cornstarch. Toss well to coat, and let marinate for about 10 minutes.

    Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken in a single layer, and cook for about 3-4 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set it aside.

      Stir-Fry Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Then, add the broccoli florets and sliced bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

        Combine and Flavor: Return the chicken to the skillet with the vegetables. Add the rest of the soy sauce and sesame oil. If using, sprinkle in the crushed red pepper flakes for an extra kick. Stir everything together and cook for another 2 minutes to combine the flavors.

          Serve: Remove from heat and serve hot over cooked jasmine or brown rice. Garnish with fresh cilantro or green onions if desired.
