Ingredients

8 ounces of pasta (penne or fusilli work great)

1 tablespoon olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 cup heavy cream

1 cup fresh basil, chopped (plus extra for garnish)

1 teaspoon Italian seasoning

Salt and pepper to taste

½ cup grated Parmesan cheese (plus extra for serving)

Optional: Red pepper flakes for heat

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup pasta water, then drain and set aside.

Sauté the Garlic: In a large skillet over medium heat, add olive oil. Once heated, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

Add Tomatoes: Pour in the diced tomatoes with their juices. Stir to combine and let simmer for about 5 minutes, allowing the flavors to meld.

Create the Cream Sauce: Reduce the heat to low and stir in the heavy cream, mixing well until combined.

Season the Sauce: Add the chopped basil, Italian seasoning, salt, and pepper to the sauce. Cook for another 2-3 minutes to let the basil flavor infuse into the cream.

Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing it in the creamy tomato sauce. If the sauce is too thick, gradually add some reserved pasta water until desired consistency is reached.

Finish with Cheese: Stir in the grated Parmesan cheese until melted and the sauce is creamy and smooth.

Serve: Divide the pasta into bowls, garnish with extra fresh basil, a sprinkle of Parmesan cheese, and optional red pepper flakes for a spicy kick.
