1 medium onion, chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

2 cans (14.5 oz each) diced tomatoes, undrained

2 cups vegetable broth or chicken broth

1 cup heavy cream or coconut milk for a dairy-free option

Salt and pepper to taste

1/2 cup fresh basil leaves, chopped, plus extra for garnish

Freshly grated Parmesan cheese for serving (optional)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic, oregano, and red pepper flakes (if using) and cook for an additional 1-2 minutes until fragrant.
