1 pound large shrimp, peeled and deveined

2 tablespoons honey

3 tablespoons soy sauce (low sodium preferred)

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 bell pepper, sliced (any color)

1 cup snap peas (trimmed)

1 cup broccoli florets

3 green onions, sliced

Sesame seeds, for garnish

Cooked rice or noodles, for serving

Instructions
 

Prepare Marinade: In a bowl, mix honey, soy sauce, rice vinegar, minced garlic, and ginger. Set aside.

    Coat the Shrimp: In another bowl, toss the shrimp with cornstarch until well-coated. This will help give the shrimp a nice texture when cooked.

      Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

        Cook the Shrimp: Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside.

          Sauté Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the sliced bell pepper, snap peas, and broccoli florets. Stir-fry for about 5 minutes until the vegetables are tender yet crisp.

            Combine: Return the cooked shrimp to the skillet and add the honey garlic sauce. Toss everything together and cook for an additional 2-3 minutes until the sauce slightly thickens and clings to the shrimp and vegetables.

              Garnish & Serve: Sprinkle with sliced green onions and sesame seeds. Serve immediately over cooked rice or noodles.
