1 cup quinoa, rinsed

2 cups vegetable or chicken broth

1 lb shrimp, peeled and deveined

4 cloves garlic, minced

1 lemon (zest and juice)

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup cherry tomatoes, halved

2 cups spinach, roughly chopped

Fresh parsley, chopped (for garnish)

Cook the Quinoa: In a medium saucepan, bring the vegetable or chicken broth to a boil. Add the rinsed quinoa, reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and liquid is absorbed. Remove from heat and set aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Add Shrimp and Seasonings: Add the shrimp to the skillet along with the lemon zest, lemon juice, paprika, thyme, salt, and pepper. Cook for 3-4 minutes until the shrimp turn pink and opaque, stirring occasionally.

        Incorporate Spinach and Tomatoes: Once the shrimp are cooked, add the cherry tomatoes and chopped spinach to the skillet. Stir everything together and cook for an additional 2-3 minutes until the spinach wilts and tomatoes soften.
