Ingredients

1 pound large shrimp, peeled and deveined

1 cup jasmine rice

2 cups low-sodium chicken broth (or water)

4 garlic cloves, minced

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

2 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped

Lemon wedges, for serving

Instructions

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring the chicken broth to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for about 15-18 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.

Prepare the Shrimp: While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds, until fragrant.

Cook the Shrimp: Add the shrimp to the skillet, season with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes on one side until they turn pink, then flip them over.

Add Lemon Flavor: Pour in the lemon juice and lemon zest, stirring everything together. Cook for an additional 2 minutes, ensuring the shrimp are fully cooked and coated in the garlicky lemon sauce.

Combine and Serve: Once the rice has rested, fluff it with a fork and divide it among plates. Top the rice with the lemon garlic shrimp. Garnish with freshly chopped parsley and serve with lemon wedges on the side for an extra burst of flavor.
