Ingredients

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Marinate the Chicken:

In a large bowl, combine olive oil, minced garlic, lemon zest, lemon juice, thyme, rosemary, oregano, salt, and black pepper. Whisk until well combined. Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Let them marinate for about 10 minutes.

      Preheat the Pan:

While the chicken is marinating, heat a large skillet over medium-high heat. Allow it to get hot for about 2-3 minutes.

          Sear the Chicken:

Once the skillet is hot, place the marinated chicken thighs skin-side down. Sear them for about 5-6 minutes, or until the skin is crispy and golden brown. Flip the chicken thighs over and reduce the heat to medium.

              Cook Through:

Continue to cook the chicken for an additional 10-12 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear. For added flavor, spoon some of the pan juices over the chicken as it cooks.

                  Rest and Serve:

Remove the chicken thighs from the pan and let them rest for about 5 minutes. This allows the juices to redistribute for a juicier bite.

                      Garnish and Enjoy:

Serve the chicken thighs garnished with fresh parsley and lemon wedges on the side. Pair with a simple salad or your favorite vegetable side for a delightful meal!
