Ingredients

4 salmon fillets (6 oz each)

1/4 cup fresh lemon juice (about 2 lemons)

2 tablespoons olive oil

2 tablespoons fresh dill, chopped

2 tablespoons fresh parsley, chopped

2 cloves garlic, minced

1 teaspoon Dijon mustard

Salt and black pepper to taste

Lemon slices, for garnish

Fresh herbs, for garnish (optional)

Instructions

Marinate the Salmon: In a bowl, whisk together the lemon juice, olive oil, dill, parsley, garlic, Dijon mustard, salt, and pepper. Place the salmon fillets in a flat dish and pour the marinade over them. Ensure the salmon is well-coated, cover, and let marinate in the refrigerator for 15 minutes.

Preheat the Grill: While the salmon is marinating, preheat your grill or grill pan over medium-high heat.

Grill the Salmon: Remove the salmon from the marinade, allowing any excess to drip off (reserve the marinade). Place the salmon skin-side down on the grill. Cook for about 4-5 minutes, then flip carefully using a spatula. Cook for an additional 4-5 minutes, or until the salmon flakes easily with a fork and has nice grill marks.

Heat the Marinade: While the salmon is grilling, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce the heat and let it simmer for about 2-3 minutes to thicken slightly.

Serve: Once the salmon is cooked, remove it from the grill and transfer to a serving platter. Drizzle the hot marinade over the salmon and garnish with fresh lemon slices and extra herbs if desired.

Enjoy: Serve with your favorite sides, such as steamed vegetables or a fresh salad, and enjoy your flavorful Lemon Herb Grilled Salmon!
