30-Minute Shrimp and Asparagus Skillet

1 lb (450g) large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 lemon, zested and juiced

1 teaspoon Old Bay seasoning (optional)

Salt and black pepper, to taste

½ cup cherry tomatoes, halved

Fresh parsley, chopped, for garnish

Instructions
 

Prep the Ingredients: Before you start cooking, ensure that your shrimp are peeled and deveined, asparagus is trimmed, garlic is minced, and cherry tomatoes are halved.

    Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat.

      Cook the Asparagus: Add the asparagus pieces and sauté for about 3-4 minutes, or until they are bright green and slightly tender.

        Add Garlic and Red Pepper Flakes: Stir in the minced garlic and red pepper flakes, cooking for an additional 30 seconds until fragrant.

          Add Shrimp: Push the asparagus to the side of the skillet or remove it temporarily and add the shrimp. Sprinkle the Old Bay seasoning if using. Cook the shrimp for about 2-3 minutes on one side, then flip them over.

            Combine Everything: Once the shrimp are pink and opaque, stir the asparagus back in and add the cherry tomatoes. Pour in the lemon juice and zest. Toss everything together, and season with salt and black pepper to taste.

              Finish Cooking: Cook for another 2-3 minutes until everything is heated through and combined well.
