2 medium zucchinis, spiralized

1 cup cherry tomatoes, halved

1 red bell pepper, diced

1 cup corn (fresh or canned)

1 small cucumber, diced

1/4 cup fresh basil, chopped

Salt and pepper, to taste

For the Avocado Mango Dressing:

1 ripe avocado

1 ripe mango, peeled and pitted

2 tbsp lime juice

1 tbsp honey (or agave syrup for vegan option)

1 clove garlic, minced

Salt and pepper, to taste

2-4 tbsp water (to thin, as needed)

Prepare the Zucchini Noodles: Using a spiralizer, create zucchini noodles from the zucchinis. If you don’t have a spiralizer, you can slice the zucchini into thin ribbons with a vegetable peeler. Place the noodles in a large mixing bowl.

    Combine the Salad Ingredients: Add the cherry tomatoes, diced red bell pepper, corn, red onion, diced cucumber, and fresh basil to the bowl with the zucchini noodles. Toss the ingredients gently to combine.

      Make the Dressing: In a blender or food processor, combine the avocado, mango, lime juice, honey, minced garlic, salt, and pepper. Blend until smooth. If the dressing is too thick, add water, one tablespoon at a time, until you reach your desired consistency.

        Dress the Salad: Pour the avocado mango dressing over the salad and toss gently until all ingredients are well coated in the dressing.
