4 cod fillets (6 ounces each)

1 cup panko breadcrumbs

2 tablespoons fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1/3 cup all-purpose flour

2 large eggs

1 tablespoon olive oil

Lemon wedges, for serving

Prep the Cod: Pat the cod fillets dry with paper towels and season them with salt and pepper on both sides.

    Prepare Breading Station: In three separate bowls, set up a breading station:

      - In the first bowl, place the flour.

        - In the second bowl, beat the eggs and add a tablespoon of water to thin it slightly.

          - In the third bowl, combine the panko breadcrumbs, chopped parsley, dill, garlic powder, onion powder, paprika, salt, and pepper. Mix well.

            Coat the Cod:

              - Dip each cod fillet first in the flour, ensuring it’s fully coated and shaking off any excess.

                - Next, dip it into the egg mixture, allowing any excess to drip off.

                  - Finally, coat the fillet in the panko breadcrumb mixture, pressing gently to adhere the crumbs to the fish.

                    Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes while you finish coating the cod.

                      Arrange in Air Fryer: Lightly brush the air fryer basket with olive oil to prevent sticking. Place the coated cod fillets in the basket in a single layer, ensuring they aren't touching (you may need to do this in batches).

                        Cook the Cod: Air fry the cod at 400°F (200°C) for 10-12 minutes, flipping halfway through, until the fish is golden brown and flakes easily with a fork.
