12 large portobello mushrooms, stems removed

1 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/2 cup cooked Italian sausage, crumbled (or diced cooked chicken for a lighter option)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Prepare the mushrooms: Start by cleaning the portobello mushrooms with a damp paper towel. Remove the stems gently and set them aside (you can chop them finely and add them to the filling if desired).

    Make the filling: In a mixing bowl, combine the softened cream cheese, shredded mozzarella cheese, cooked Italian sausage, grated Parmesan cheese, minced garlic, dried oregano, red pepper flakes (if using), salt, and pepper. Mix until all ingredients are well incorporated and smooth.

      Stuff the mushrooms: Using a spoon, generously fill each portobello mushroom cap with the cheese and sausage mixture, ensuring they are well-packed. Make sure to level off the top for an even finish.

        Preheat the air fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Air fry the stuffed mushrooms: Lightly spray the air fryer basket with olive oil to prevent sticking. Place the stuffed mushrooms in the basket in a single layer. Depending on the size of your air fryer, you may need to do this in batches. Spray the tops lightly with olive oil.

            Cooking time: Air fry the mushrooms for 10-12 minutes, or until the mushrooms are tender and the filling is bubbly and golden brown on top. Check for doneness at the 8-minute mark to prevent overcooking.
