1 medium zucchini, sliced into half-moons

1 bell pepper (any color), sliced into strips

1 cup cherry tomatoes, halved

1 medium yellow squash, sliced into half-moons

1 cup asparagus, trimmed and cut into 2-inch pieces

1 red onion, chopped into wedges

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped for garnish (optional)

Instructions
 

Prep the Vegetables: Begin by washing and slicing all the vegetables as directed. Ensure they are uniformly sized for even cooking.

    Season the Mix: In a large mixing bowl, combine the sliced zucchini, bell pepper, cherry tomatoes, yellow squash, asparagus, and red onion. Drizzle the olive oil over the vegetables, then add the garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss everything until the veggies are well coated with the oil and seasonings.

      Preheat the Air Fryer: Set your air fryer to 375°F (190°C) and preheat for about 5 minutes. This step helps to ensure that the veggies get that perfect crisp.

        Air Fry the Veggies: Once preheated, carefully place the seasoned vegetable mixture in the air fryer basket in a single layer. If necessary, cook in batches to avoid overcrowding.

          Cook: Air fry the vegetables for 12-15 minutes, shaking the basket halfway through the cooking time. Continue cooking until the vegetables are tender and slightly charred, adjusting the time as needed depending on your air fryer model and the size of your vegetable pieces.
