1 pound ground turkey

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup grated Parmesan cheese

1 egg, lightly beaten

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil for coating

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze to eliminate excess moisture. This step is crucial to avoid soggy nuggets.

      Mix the Ingredients: In a large mixing bowl, combine the ground turkey, grated zucchini, panko breadcrumbs, grated Parmesan cheese, beaten egg, minced garlic, onion powder, dried oregano, paprika, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.

        Form the Nuggets: Scoop out a tablespoon of the mixture and shape it into nugget forms. Repeat this process until all the mixture is used. You should have about 12-15 nuggets.

          Prepare the Air Fryer Basket: Lightly spray the air fryer basket with cooking spray or brush with olive oil to prevent sticking.

            Air Fry the Nuggets: Place the turkey zucchini nuggets in a single layer in the air fryer basket. Make sure not to overcrowd them; you may need to work in batches. Spray the tops lightly with cooking spray for added crispiness.
