1 pound ground turkey

2 medium zucchinis, shredded

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Olive oil spray for cooking

Prepare the Zucchini: Begin by washing the zucchinis thoroughly. Using a grater, shred the zucchinis finely. Place the shredded zucchini in a clean kitchen towel or cheesecloth, and twist to squeeze out excess moisture. This step is crucial to ensure your poppers don’t get soggy.

    Mix the Ingredients: In a large bowl, combine the ground turkey, shredded zucchini, breadcrumbs, grated Parmesan, egg, minced garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.

      Form the Poppers: Using your hands, take a small amount of the mixture (about 2 tablespoons) and shape it into small oval or round poppers. Place them on a parchment-lined plate or tray.
