Almond Joy Coconut Bars

1 ½ cups unsweetened shredded coconut

1 cup almond flour

1/4 cup maple syrup (or honey)

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 cup dark chocolate chips (70% or higher)

1 teaspoon coconut oil

For the Toppings:

1/2 cup whole almonds (raw or roasted, as preferred)

Sea salt, for sprinkling (optional)

Make the Base: In a large mixing bowl, combine the shredded coconut, almond flour, maple syrup, melted coconut oil, vanilla extract, and a pinch of salt. Stir until all the ingredients are well mixed and it's a sticky dough-like consistency.

    Shape the Bars: Line an 8x8 inch baking dish with parchment paper for easy removal. Press the coconut mixture firmly into the bottom of the dish, creating an even layer. Ensure it's packed tightly for a good structure.

      Add Almonds: Place whole almonds evenly spaced on top of the coconut mixture. Gently press them down so they stick slightly into the mixture.

        Chill the Base: Transfer the dish to the refrigerator for about 30 minutes to firm up while you prepare the chocolate coating.

          Prepare Chocolate Coating: In a microwave-safe bowl, combine the dark chocolate chips and 1 teaspoon of coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

            Coat the Bars: Remove the coconut base from the refrigerator. Using a sharp knife, cut the layer into bars (approximately 12 bars). Dip each bar into the melted chocolate, ensuring it is fully coated. Allow excess chocolate to drip off.

              Set the Bars: Place the coated bars back on the parchment-lined dish. If desired, sprinkle a pinch of sea salt on top of each bar for an extra flavor kick.

                Chill Again: Return the bars to the refrigerator and let them set for another 30-60 minutes until the chocolate is hardened.
