12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup mini pepperoni slices

1 cup black olives, pitted and sliced

1 cup marinated artichoke hearts, drained and chopped

1 cup roasted red peppers, diced

½ cup red onion, finely chopped

½ cup fresh mozzarella balls, halved

½ cup fresh basil leaves, torn

¾ cup Italian dressing

Salt and pepper, to taste

Grated Parmesan cheese, for serving (optional)

Instructions
 

Cook Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to the package instructions. Drain and rinse under cold water to cool. Set aside.

    Prepare Vegetables and Add-Ins: While the tortellini is cooking, prep the vegetables and add-ins. Halve the cherry tomatoes, slice the olives and pepperoni, chop the artichoke hearts, and dice the roasted red peppers.

      Combine Ingredients: In a large mixing bowl, combine the cooked tortellini, cherry tomatoes, mini pepperoni, black olives, artichoke hearts, roasted red peppers, red onion, and fresh mozzarella balls. Gently toss to mix everything together.

        Dress the Salad: Pour the Italian dressing over the salad mixture. Add torn basil leaves. Season with salt and pepper to taste. Gently toss again to ensure everything is well-coated in the dressing.

          Chill and Serve: Cover the bowl with plastic wrap and refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature, topped with grated Parmesan cheese if desired.
