Asian Chicken Cabbage Slaw

1/4 cup green onions, sliced

1/4 cup roasted peanuts, roughly chopped (optional)

_For the Dressing:_

1/4 cup peanut oil (or sesame oil)

2 tbsp soy sauce (low-sodium preferred)

2 tbsp rice vinegar

1 tbsp honey or maple syrup

1 tbsp fresh lime juice

1 tsp sesame oil

1 clove garlic, minced

1 tsp fresh ginger, grated
