8 oz rice noodles

2 cups shredded red cabbage

1 cup shredded carrots

1 cup snap peas, trimmed and halved

1 cup bell peppers (red and yellow), thinly sliced

1/2 cup scallions, chopped (green parts only)

1/4 cup fresh cilantro, chopped

1/4 cup toasted peanuts, for garnish

For the Peanut Dressing:

1/3 cup creamy peanut butter

2 tbsp soy sauce

2 tbsp rice vinegar

1 tbsp honey or maple syrup

2 tsp sesame oil

1 garlic clove, minced

1-2 tbsp warm water (to thin dressing)

Red pepper flakes (optional, to taste)

Instructions
 

Prepare the Noodles: Cook the rice noodles according to the package instructions. Once cooked, drain and rinse them under cold water to stop the cooking process. Set aside.

    Make the Peanut Dressing: In a medium bowl, whisk together the creamy peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, minced garlic, and red pepper flakes (if using). Gradually add warm water until you reach your desired consistency. The dressing should be creamy but pourable.

      Combine the Salad: In a large mixing bowl, combine the cooked rice noodles, shredded red cabbage, carrots, snap peas, bell peppers, scallions, and fresh cilantro. Toss everything together until well mixed.

        Dress the Salad: Pour the peanut dressing over the mixed salad and toss until everything is evenly coated.
