1.5 lbs boneless, skinless chicken thighs

1 cup Greek yogurt

1 medium cucumber, grated and water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon red wine vinegar

Fresh dill or mint, chopped (optional, to taste)

Salt and black pepper to taste

For Serving:

4 large pita breads

Sliced tomatoes

Sliced red onions

Shredded lettuce

Sliced olives (optional)

Marinate the Chicken:

    In a bowl, combine the olive oil, minced garlic, lemon juice, dried oregano, cumin, paprika, salt, and black pepper. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or up to overnight for deeper flavor.

      Prepare the Tzatziki Sauce:

        In a mixing bowl, combine the Greek yogurt, grated cucumber (ensure to squeeze out excess water), minced garlic, olive oil, red wine vinegar, and chopped dill or mint (if using). Season with salt and pepper to taste. Mix well and refrigerate for about 30 minutes to allow flavors to meld.

          Cook the Chicken:

            Preheat a grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 5-7 minutes per side, or until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (75°C). Once cooked, remove from heat and let it rest for a few minutes before slicing into thin strips.

              Warm the Pita:
