Avocado Chicken Quesadilla Melts

2 cups cooked shredded chicken

1 ripe avocado, mashed

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 cup diced tomatoes

1/4 cup finely chopped red onion

1/4 cup chopped fresh cilantro

1 tsp garlic powder

1 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

4 large flour tortillas

2 tbsp olive oil (for cooking)

Lime wedges (for serving)

Prepare the Filling: In a medium-sized mixing bowl, combine the shredded chicken, mashed avocado, Monterey Jack cheese, cheddar cheese, diced tomatoes, red onion, cilantro, garlic powder, cumin, chili powder, salt, and pepper. Mix well until all ingredients are thoroughly combined.

    Preheat the Pan: Heat a large skillet over medium heat and add 1 tablespoon of olive oil, allowing it to heat up.

      Assemble the Quesadilla: Lay one tortilla flat in the skillet. Spoon half of the chicken and avocado mixture onto half of the tortilla. Fold the tortilla over to create a half-moon shape.

        Cook: Cook the quesadilla for about 3-4 minutes on one side until golden brown and crispy. Carefully flip it over and add another tablespoon of olive oil if needed. Cook for an additional 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

          Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat the process with the remaining tortilla and filling.

            Slice and Serve: Cut the quesadillas into wedges and serve with lime wedges on the side for squeezing over the top. Enjoy with salsa or sour cream if desired!
