2 large ripe avocados

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

4 slices of whole grain bread

Juice of 1 lime (divided)

1 small tomato, diced (optional)

Fresh cilantro or parsley, for garnish

Red pepper flakes (for garnish, optional)

Prepare the Chickpeas: In a medium bowl, combine the drained chickpeas, olive oil, smoked paprika, garlic powder, cayenne pepper, salt, and black pepper. Toss well to coat all the chickpeas evenly.

    Roast the Chickpeas: Preheat your oven to 400°F (200°C). Spread the seasoned chickpeas onto a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden and crispy, stirring halfway through to ensure even cooking.

      Prep the Avocados: While the chickpeas are roasting, cut the avocados in half, remove the pits, and scoop out the flesh into a bowl. Add half of the lime juice to prevent browning, and season with salt and pepper. Mash until you reach your desired consistency (smooth or chunky).

        Toast the Bread: In a toaster or on a grill, toast the whole grain bread slices until they are golden brown and crispy.

          Assemble the Toasts: Spread a generous layer of the mashed avocado on each slice of toasted bread. Top with the spicy roasted chickpeas and add diced tomatoes, if using.

            Garnish: Drizzle the remaining lime juice over the top and sprinkle with chopped cilantro or parsley for freshness. If you like extra heat, add a pinch of red pepper flakes.
