Ingredients

1 cup of milk

1/2 cup of all-purpose flour

1/2 cup of granulated sugar

1/2 cup of unsalted butter, melted

3 large eggs

Zest of 1 lemon

1/4 cup of fresh lemon juice (about 2 lemons)

1 teaspoon of baking powder

1/4 teaspoon of salt

Powdered sugar (for dusting, optional)

Fresh berries (for garnish, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or a similar-sized baking dish with butter or non-stick cooking spray.

Blend Wet Ingredients: In a medium mixing bowl, whisk together the melted butter, milk, eggs, lemon zest, and lemon juice until fully combined and smooth.

Combine Dry Ingredients: In a separate large bowl, whisk together the flour, sugar, baking powder, and salt.

Mix Everything Together: Gradually pour the wet mixture into the dry ingredients while whisking continuously. Continue until the batter is smooth and well-integrated. Don't worry if it looks a bit thin; this is normal.

Pour & Bake: Pour the batter into the prepared pie dish. Place the dish in the preheated oven and bake for approximately 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool Down: Once baked, remove the pie from the oven and allow it to cool for at least 15 minutes before serving. The pie will puff up while baking but will sink slightly as it cools.

Serve: Dust with powdered sugar if desired and garnish with fresh berries. Slice into wedges and enjoy your delightful baby lemon impossible pies!
