Ingredients

2 large apples (e.g., Granny Smith or Honeycrisp), peeled, cored, and diced

1 ½ cups all-purpose flour

1 tablespoon baking powder

1 teaspoon ground cinnamon

½ teaspoon nutmeg

¼ teaspoon salt

½ cup granulated sugar

1 large egg

½ cup milk (or dairy alternative)

¼ cup unsalted butter, melted and slightly cooled

1 teaspoon vanilla extract

¾ cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

Prepare the Apples: In a mixing bowl, combine the diced apples with 1 tablespoon of the granulated sugar and ½ teaspoon of ground cinnamon. Toss to coat evenly and set aside.

Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, remaining granulated sugar, cinnamon, nutmeg, and salt until well combined.

Combine Wet Ingredients: In another bowl, whisk together the egg, milk, melted butter, and vanilla extract until fully blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Be careful not to overmix; some lumps are okay.

Fold in Apples: Gently fold the cinnamon-sugar coated apples into the batter until they are evenly distributed.

Scoop the Batter: Using a spoon or ice cream scoop, drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.

Bake: Bake in the preheated oven for 15-20 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.

Prepare the Glaze: While the fritters are baking, whisk together the powdered sugar and 2 tablespoons of milk in a small bowl until smooth.

Glaze the Fritters: Once baked, remove the fritters from the oven and allow them to cool for about 5 minutes. Drizzle the glaze over warm fritters, allowing it to set slightly.

Serve: Enjoy the fritters warm as a delightful breakfast treat or a sweet snack!
