Ingredients

2 medium zucchinis, thickly sliced into rounds (about 1/2 inch)

1 cup cooked chicken, shredded (preferably rotisserie)

1/4 cup buffalo sauce (adjust to taste)

1/2 cup cream cheese, softened

1/2 cup shredded mozzarella cheese

1/4 cup finely chopped green onions

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Olive oil spray or brush, for coating

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Zucchini: Arrange the zucchini rounds on the baking sheet. Lightly spray or brush with olive oil. Season with a pinch of salt and pepper. Bake in the preheated oven for about 10 minutes, or until they are slightly tender. Remove from the oven and let cool slightly.

Mix the Chicken Filling: In a mixing bowl, combine the shredded chicken, buffalo sauce, cream cheese, garlic powder, onion powder, and half of the mozzarella cheese. Stir well until everything is evenly coated and mixed together.

Assemble the Rounds: Take each zucchini round and place a generous spoonful of the buffalo chicken mixture on top. Press down slightly to ensure it adheres.

Top with Cheese: Sprinkle the remaining mozzarella cheese evenly over the filled zucchini rounds, followed by the chopped green onions for added flavor and garnish.

Bake Again: Return the baking sheet to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

Serve and Enjoy: Remove from the oven, let cool slightly, and serve warm as a delicious appetizer or main dish. Pair with extra buffalo sauce or your favorite dipping sauce if desired.
