Baked Chicken Alfredo Lasagna Rollups

9 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

2 cups fresh spinach, chopped

3 cups Alfredo sauce (store-bought or homemade)

1 cup mozzarella cheese, shredded

1 cup Parmesan cheese, grated

2 cloves garlic, minced

1/2 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook Lasagna Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

      Prepare Filling: In a bowl, combine the shredded chicken, ricotta cheese, chopped spinach, minced garlic, Italian seasoning, salt, and pepper. Mix well to combine.

        Assemble Rollups: Spread a thin layer of Alfredo sauce (about 1/2 cup) on the bottom of a 9x13 inch baking dish. Take one lasagna noodle and place it on a clean surface. Spread about 3 tablespoons of the chicken filling along the noodle, then carefully roll it up. Place the rollup seam-side down in the baking dish. Repeat with the remaining noodles.

          Add More Sauce: Once all the rollups are in the dish, pour the remaining Alfredo sauce over the top. Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the sauce.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
