Coconut oil is a fantastic addition to your baked banana chips, offering not just a hint of tropical flavor but also a healthier fat option. When you brush your banana slices with melted coconut oil, it not only enhances the taste but also aids in achieving an even golden-brown finish during baking. The subtle sweetness of coconut oil complements the natural sugars in the bananas and the warm spices, creating a delicious and irresistible treat. For those who prefer a lighter option, you can certainly omit the coconut oil; however, you may find that adding it elevates the flavor profile and provides a luscious mouthfeel that makes each chip even more enjoyable.

Ingredients

3 ripe bananas

1 tablespoon lemon juice

1 tablespoon ground cinnamon

1 tablespoon coconut sugar (or brown sugar)

Pinch of sea salt

Optional: 1 tablespoon of coconut oil (for brushing)

Instructions

Preheat the Oven: Begin by preheating your oven to 200°F (90°C). This low temperature will help evenly dehydrate the bananas without burning them.

Prepare the Bananas: Peel the bananas and slice them into thin, even rounds, about 1/8 inch thick. To prevent browning, immediately toss the banana slices in a large bowl with the lemon juice, ensuring all slices are coated.

Mix the Cinnamon Sugar: In a small bowl, combine the ground cinnamon, coconut sugar, and a pinch of sea salt. Mix well to create an even blend.

Coat the Banana Slices: Lay the banana slices on a parchment-lined baking sheet in a single layer, making sure not to overlap them. If you want extra richness, lightly brush them with melted coconut oil using a pastry brush. This step is optional but adds a nice flavor.

Sprinkle with Cinnamon Sugar: Evenly sprinkle the cinnamon sugar mixture over the arranged banana slices, allowing for an even coating.

Bake: Place the baking sheet in the preheated oven and bake for about 2-3 hours. Keep an eye on them, and turn the banana slices halfway through baking to ensure they soften and crisp evenly.

Check for Doneness: The banana chips should be golden brown and crisp once done. Remove them from the oven and allow to cool on the baking sheet for a few minutes; they'll continue to crisp up as they cool.

Store: Once cooled, transfer your baked cinnamon banana chips to an airtight container. These chips can be stored at room temperature for up to a week—if they last that long!
