Ingredients

1 cup cottage cheese (preferably full-fat)

4 large eggs

1/2 cup cherry tomatoes, halved

1/4 cup spinach, chopped (fresh or frozen)

1/4 cup bell peppers, diced (any color)

1/4 cup green onions, sliced

1 tsp garlic powder

1/2 tsp paprika

Salt and pepper to taste

1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

Fresh herbs for garnish (optional, e.g., parsley or chives)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Mixture: In a large bowl, combine the cottage cheese, garlic powder, paprika, salt, and pepper. Mix well until it's creamy and all the spices are evenly distributed.

Add the Eggs: Crack the eggs into the bowl with the cottage cheese mixture. Whisk everything together until the eggs are fully incorporated.

Incorporate the Veggies: Gently fold in the cherry tomatoes, spinach, bell peppers, and green onions. Make sure the veggies are evenly distributed throughout the egg mixture.

Prepare the Baking Dish: Grease a medium-sized baking dish with cooking spray or a light coating of oil to prevent sticking.

Pour the Mixture: Pour the cottage cheese and egg mixture into the prepared baking dish, spreading it out evenly.

Add Cheese Topping: Sprinkle the shredded cheese over the top of the mixture, ensuring it covers the entire surface.

Bake: Place the dish in the preheated oven and bake for about 25-30 minutes, or until the eggs are set and the top is golden brown.

Cool and Serve: Once out of the oven, let it cool for a few minutes. Garnish with fresh herbs if desired, then slice and serve warm.
