6 large eggs

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1/4 cup bell pepper, diced (any color)

1/4 cup red onion, diced

1/2 cup shredded cheese (cheddar, mozzarella, or your favorite blend)

1 tsp garlic powder

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp paprika (optional)

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Muffin Tin: Lightly grease a standard muffin tin with cooking spray or olive oil to ensure easy removal of the egg cups.

      Mix the Vegetables: In a medium mixing bowl, combine the chopped spinach, cherry tomatoes, bell pepper, and red onion. Stir until evenly mixed.

        Whisk the Eggs: In another larger bowl, crack the eggs and whisk them together. Add the garlic powder, salt, black pepper, and paprika (if using), and whisk until the mixture is well combined.

          Combine the Mixtures: Gently fold the vegetable mixture into the egg mixture. Add the shredded cheese and stir until everything is well incorporated.

            Fill the Muffin Tin: Pour the egg and vegetable mixture evenly into the prepared muffin tin cups, filling each cup about 3/4 full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the egg cups are set and lightly golden on top.

                Cool and Serve: Once baked, remove the muffin tin from the oven and allow the egg cups to cool for a few minutes. Use a small knife or spatula to gently loosen the edges before removing them from the tin.

                  Garnish (Optional): For an extra touch, garnish your baked egg cups with fresh herbs, such as parsley or chives, before serving.
