6 large eggs

1 cup shredded cheddar cheese (or your favorite cheese)

1/2 cup diced bell peppers (red, green, or a mix)

1/4 cup diced onions

1/4 cup cooked and crumbled bacon or sausage (optional)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

Fresh parsley or chives for garnish (optional)

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Muffin Tin: Spray a standard muffin tin with cooking spray or lightly brush it with olive oil to prevent sticking.

      Combine Ingredients: In a large mixing bowl, crack the eggs and whisk them until fully blended. Add in the shredded cheese, diced bell peppers, diced onions, and cooked bacon or sausage (if using). Season the mixture with salt, pepper, and paprika. Stir until all ingredients are well combined.

        Fill Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. Leave a little space at the top for the eggs to expand as they bake.

          Bake: Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until the egg cups are set in the middle and lightly golden on top. You can check for doneness by inserting a toothpick; it should come out clean.

            Cool and Remove: Once done, remove the muffin tin from the oven and let it cool for about 5 minutes. Gently run a knife around the edges of each cup to help release them, then carefully lift them out of the tin.
