6 large eggs

1 cup whole milk

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 cup diced bell peppers (red, green, or yellow)

1/2 cup diced red onion

1 cup fresh spinach, chopped

1 cup shredded cheese (cheddar or Mexican blend)

6 small corn or flour tortillas

Cooking spray or olive oil, for greasing

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with cooking spray or olive oil.

    Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, paprika, and garlic powder until well combined. Set aside.

      Sauté the Vegetables: In a skillet over medium heat, add a drizzle of olive oil. Sauté the diced bell peppers and red onion for about 3-4 minutes until softened. Stir in the chopped spinach and sauté for another 1-2 minutes until wilted. Remove from heat.

        Assemble the Tortilla Layers: Lay the tortillas in the greased baking dish, overlapping them slightly to create an even base. You might need to tear a couple of tortillas to fit the shape of the dish.

          Add the Veggies: Evenly distribute the sautéed vegetable mixture over the tortillas, followed by a sprinkle of shredded cheese.
