Ingredients

20 large pasta shells

1 cup ricotta cheese

1 cup crumbled feta cheese

2 cups fresh spinach, chopped

1 cup marinara sauce

1/2 cup mozzarella cheese, shredded

1/4 cup grated Parmesan cheese

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Pasta: In a large pot of salted boiling water, cook the pasta shells according to package directions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling:

        - In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

          - Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

            - In a mixing bowl, combine ricotta cheese, crumbled feta cheese, cooked spinach, dried oregano, red pepper flakes (if using), salt, and pepper. Mix until well blended.

              Stuff the Shells:

                - Take each pasta shell and fill it generously with the spinach and cheese mixture. Place the stuffed shells seam side up in a greased baking dish.

                  Add Sauce and Cheese:

                    - Pour the marinara sauce evenly over the stuffed shells. Sprinkle shredded mozzarella cheese and grated Parmesan cheese on top.

                      Bake:

                        - Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbling and golden.

                          Serve:

                            - Let cool for a few minutes before serving. Garnish with fresh basil if desired. Enjoy your delicious Baked Feta and Spinach Stuffed Shells!
