Ingredients

4 haddock fillets (about 6 oz each)

1 cup panko bread crumbs

3 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried parsley

1 teaspoon lemon zest

Salt and pepper to taste

2 tablespoons fresh lemon juice

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) and lightly grease a baking dish or line it with parchment paper.

Prepare the Haddock: Rinse the haddock fillets under cold water and pat them dry with paper towels. Place them in the prepared baking dish. Drizzle with olive oil and lemon juice, then season with salt and pepper to taste.

Make the Garlic Crumbs: In a medium bowl, combine the panko bread crumbs, melted butter, minced garlic, dried thyme, dried parsley, lemon zest, and a pinch of salt and pepper. Mix until the crumbs are evenly coated.

Top the Fillets: Evenly spread the garlic crumb mixture over the haddock fillets, ensuring they are generously coated.

Bake the Haddock: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the haddock is cooked through and flakes easily with a fork. The topping should be golden brown and crispy.

Garnish and Serve: Once baked, remove from the oven and let it cool for a minute. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
