8 oz elbow macaroni

2 cups cauliflower florets, steamed

1 cup butternut squash, peeled and cubed, steamed

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

4 cups milk (whole or 2%)

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

Salt and pepper to taste

1 cup whole wheat breadcrumbs

2 tbsp olive oil

Fresh parsley (for garnish, optional)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Prepare the Veggies: In a blender or food processor, combine the steamed cauliflower and butternut squash. Blend until smooth and creamy. If the mixture is too thick, add a splash of milk to help it along.

        Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until it becomes a light golden color. Gradually whisk in the milk, continuing to stir until the mixture thickens (about 5-7 minutes).

          Add Seasonings and Cheese: Once thickened, stir in the garlic powder, onion powder, paprika, salt, and pepper. Then add the blended veggie mixture, stirring until well combined. Reduce heat and mix in the cheddar, mozzarella, and Parmesan cheese until melted and smooth.
