Ingredients

4 salmon fillets (about 6 ounces each)

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably Panko for extra crunch)

2 tablespoons fresh parsley, chopped

2 cloves garlic, minced

2 tablespoons Dijon mustard

1 tablespoon olive oil

1 teaspoon lemon zest

Salt and pepper to taste

Lemon wedges, for serving

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.

Prepare the Topping Mixture: In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, fresh parsley, minced garlic, lemon zest, salt, and pepper. Mix well until everything is evenly combined.

Prep the Salmon: Pat the salmon fillets dry with a paper towel. Season each fillet with salt and pepper.

Apply the Mustard: Spread a thin layer of Dijon mustard on the top of each salmon fillet. This will help the crust adhere and add a delicious flavor.

Add the Topping: Carefully spoon the Parmesan breadcrumb mixture over the mustard-coated salmon fillets, pressing gently to ensure the topping sticks well.

Drizzle with Olive Oil: Drizzle the olive oil over the crusted fillets to help them crisp up while baking.

Bake the Salmon: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the salmon is cooked through and the crust is golden brown. The internal temperature should reach 145°F (63°C).

Serve: Once ready, remove the salmon from the oven and let it rest for a few minutes. Serve with lemon wedges on the side and enjoy your deliciously baked Parmesan crusted salmon!
