Ingredients

4 boneless, skinless chicken breasts

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried thyme (or 1 tablespoon fresh thyme)

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon Dijon mustard

Fresh basil leaves for garnish (optional)

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, thyme, salt, pepper, and Dijon mustard. Add the chicken breasts to the bowl, ensuring they are thoroughly coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to 4 hours for more flavor).

Preheat the Grill or Oven: If you’re grilling, preheat your grill to medium-high heat. For baking, preheat your oven to 400°F (200°C).

Prepare the Glaze: In a small saucepan over medium heat, pour in the leftover marinade (if you plan to cook the chicken in the oven) and bring it to a gentle boil. Reduce the heat and let it simmer for about 5-7 minutes until it thickens slightly. Remove from heat and set aside.

        Cook the Chicken:

          - Grilling Method: Remove the chicken breasts from the marinade (discard the marinade) and place them on the preheated grill. Grill the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the chicken is beautifully charred.

            - Baking Method: Place the marinated chicken breasts in a baking dish. Bake for approximately 25-30 minutes, basting with the prepared glaze halfway through until the chicken is cooked through.

Glaze the Chicken: Once the chicken is cooked, brush the thickened glaze all over the chicken breasts for added flavor.

Serve: Allow the chicken to rest for a few minutes before slicing. Serve with your choice of side dishes, such as steamed vegetables or a fresh salad. Garnish with fresh basil leaves if desired.
