Ingredients

8 oz (225g) cremini or button mushrooms, sliced

2 tbsp olive oil

1 tbsp butter

2 cloves garlic, minced

1/4 cup balsamic vinegar

1 tbsp honey or maple syrup (for a vegan option)

Salt and black pepper, to taste

1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

4 slices crusty bread (such as sourdough or ciabatta)

1/4 cup goat cheese or vegan cream cheese (optional)

Fresh parsley, chopped, for garnish

Instructions

Sauté the Mushrooms: In a large skillet, heat the olive oil and butter over medium heat. Add the sliced mushrooms and sauté them for about 5-7 minutes until they are golden and tender. Stir occasionally to ensure even cooking.

Add Garlic and Thym: Once the mushrooms are browned, add the minced garlic and thyme. Sauté for an additional 1-2 minutes until the garlic is fragrant but not burnt.

Create the Glaze: Pour in the balsamic vinegar and honey (or maple syrup). Stir to combine and let the mixture simmer for 3-5 minutes until it thickens slightly. Season with salt and black pepper to taste.

Toast the Bread: While the mushrooms are simmering, toast the slices of bread until golden brown and crispy. You can use a toaster or lightly grill them on a skillet.

Assemble the Toast: Spread a layer of goat cheese or vegan cream cheese on each piece of toasted bread if desired. Top each slice generously with the balsamic glazed mushrooms.

Garnish and Serve: Finish by sprinkling fresh parsley over the top for an added burst of color and flavor. Serve immediately while the toast is warm.
