For the crust:

1 ½ cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the banana filling:

3 ripe bananas, sliced

1/4 cup granulated sugar

3 tablespoons cornstarch

1/4 teaspoon salt

2 1/2 cups whole milk

1 teaspoon vanilla extract

3 large egg yolks, lightly beaten

2 tablespoons unsalted butter

For the whipped topping:

1 cup heavy cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

For garnish:

Extra banana slices

Grated chocolate or chocolate shavings (optional)

Instructions

Prepare the crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake in the preheated oven for about 8-10 minutes or until golden brown. Allow to cool completely.

Make the banana filling: In a medium saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in the milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and starts to bubble. Remove from heat.

Incorporate the egg yolks: Slowly pour about 1 cup of the hot milk mixture into the beaten egg yolks, whisking constantly to temper the eggs. Then, gradually add this mixture back into the saucepan with the remaining milk mixture. Return to heat and cook for another 2-3 minutes, stirring continuously until thickened. Remove from heat and stir in the vanilla extract and butter.

Layer the bananas: In the cooled crust, arrange the sliced bananas evenly. Pour the warm banana filling over the bananas, smoothing it out with a spatula. Cover with plastic wrap to prevent a skin from forming and refrigerate for at least 4 hours or until set.

Prepare the whipped topping: In a clean mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Assemble and serve: Once the pie filling is set, spread the whipped cream evenly over the top. Garnish with extra banana slices and grated chocolate or chocolate shavings, if desired. Slice and serve chilled. Enjoy the creamy, dreamy banana bliss!
