Ingredients

1 cup rolled oats

1 ripe banana, mashed

1 cup milk (dairy or non-dairy)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 tablespoon honey or maple syrup (optional)

Cooking spray or oil for frying

Instructions

Prepare the Oats: In a blender or food processor, blend the rolled oats until they reach a fine flour consistency. This will serve as the base for your pancakes and provide great texture.

Mix Wet Ingredients: In a large bowl, combine the mashed banana, milk, eggs, vanilla extract, and honey or maple syrup (if using). Whisk until smooth and well combined.

Combine Dry Ingredients: In another bowl, mix the oat flour, baking powder, cinnamon, and salt until evenly distributed.

Combine Mixtures: Slowly add the dry ingredient mixture into the wet mixture, stirring gently until just combined. Be careful not to overmix; it's okay if there are a few lumps.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat and lightly coat it with cooking spray or oil.

Cook the Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Carefully flip the pancakes and cook for another 2-3 minutes, until golden brown.

Serve: Stack the pancakes on a plate and serve immediately with toppings of your choice—fresh fruit, nuts, maple syrup, or yogurt are all excellent options!
