Banana Pudding Cheesecake

For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon cinnamon (optional)

For the cheesecake filling:

2 (8 oz) packages cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

2 ripe bananas, mashed

½ teaspoon lemon juice

For the banana pudding layer:

2 cups whole milk

1 (3.4 oz) package instant vanilla pudding mix

1 teaspoon vanilla extract

2 medium ripe bananas, sliced

For the topping:

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

Crushed vanilla wafers (for garnish)

Instructions
 

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon (if using). Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 8-10 minutes until set. Let cool.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

              - Gradually add the granulated sugar and vanilla extract, mixing until well incorporated.

                - Add the eggs one at a time, beating on low speed until just combined after each addition.

                  - Mix in the sour cream, mashed bananas, and lemon juice until smooth. Do not overmix.

                    Bake the cheesecake:

                      - Pour the cheesecake filling into the cooled crust and spread evenly.

                        - Bake in the preheated oven for 50-60 minutes or until the edges are set, and the center slightly jiggles.

                          - Turn off the oven and crack the door, letting the cheesecake cool inside for about 1 hour to prevent cracking.

                            - Once cooled, refrigerate for at least 4 hours (or overnight) to set fully.

                              Prepare the banana pudding layer:

                                - In a mixing bowl, whisk together the milk and instant vanilla pudding mix until thickened (about 2 minutes).

                                  - Stir in the vanilla extract.

                                    - Once the cheesecake has set, carefully spread the pudding mixture over the top of the cheesecake. Arrange the sliced bananas evenly over the pudding layer.

                                      Make the whipped topping:

                                        - In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.

                                          - Carefully spread or pipe the whipped cream over the banana pudding layer.

                                            Garnish and serve:

                                              - Sprinkle crushed vanilla wafers over the whipped cream for added crunch.
