Basil Peach Bruschetta

4 ripe peaches, diced (preferably white peaches for sweetness)

1 cup fresh basil leaves, chopped

1 cup cherry tomatoes, diced

1 tablespoon balsamic vinegar

2 tablespoons extra virgin olive oil

Salt and pepper, to taste

1 loaf of baguette or ciabatta, sliced into ½ inch pieces

1 clove garlic, peeled and halved

Optional: Crumbled feta or goat cheese for topping

Prepare the Peach Mixture: In a medium bowl, combine the diced peaches, chopped basil, and cherry tomatoes. Drizzle with balsamic vinegar and olive oil. Season with salt and pepper to taste. Gently toss to combine. Set aside to allow the flavors to meld while you prepare the bread.
