4 large flatbreads (naan or pita works great)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn kernels (fresh or frozen)

1/4 cup chopped fresh cilantro

1 tablespoon olive oil
