BBQ Chicken & Ranch Pasta Bake

2 cups cooked pasta (penne or rotini work well)

2 cups shredded rotisserie chicken

1 cup BBQ sauce (plus extra for drizzling)

1 cup ranch dressing

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup diced red onion

1/2 cup sweet corn (canned or frozen)

1/4 cup sliced black olives (optional)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley or chives for garnish

Instructions
 

Preheat the oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

    Cook the pasta according to the package instructions until al dente. Drain and set aside to cool slightly.

      In a large mixing bowl, combine the shredded chicken, BBQ sauce, ranch dressing, cooked pasta, red onion, corn, black olives, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir well to combine all ingredients.

        Spread half of the pasta mixture into the bottom of the prepared baking dish. Layer half of the cheddar and mozzarella cheese on top of this layer.

          Add the remaining pasta mixture over the cheese layer, spreading it out evenly, and top it off with the rest of the cheese.

            Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Once done, remove from the oven and let it cool for about 5 minutes. Drizzle a little extra BBQ sauce on top for added flavor and garnish with chopped parsley or chives before serving.
