4 medium zucchinis

2 cups cooked, shredded chicken (rotisserie chicken works great)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup corn kernels (fresh, frozen, or canned)

1 bell pepper, diced (any color)

1/2 cup red onion, finely chopped

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Fresh cilantro or parsley for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the seeds and flesh using a spoon, creating a boat shape. Leave about 1/4 inch on the bottom to hold the filling.

      Mix the Filling: In a large bowl, combine the shredded chicken, BBQ sauce, corn, diced bell pepper, red onion, garlic powder, onion powder, and salt and pepper. Mix well until all ingredients are coated with BBQ sauce.

        Stuff the Zucchini: Place the zucchini boats on a baking sheet lined with parchment paper or lightly greased. Spoon the BBQ chicken mixture evenly into each zucchini boat.

          Add Cheese: Sprinkle the shredded cheddar cheese generously over the filled zucchini boats.
