Ingredients

1 lb (450g) boneless, skinless chicken breasts

1 cup crushed BBQ-flavored potato chips

1/2 cup all-purpose flour

2 large eggs

1/2 cup buttermilk (or milk with 1 tsp vinegar)

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

Cooking spray or vegetable oil for frying

Instructions

Preheat Oven: Begin by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper. If you plan to fry the nuggets, make sure to have a skillet ready.

Prep Chicken: Cut the chicken breasts into bite-sized pieces, about 1-2 inches.

Set Up Dipping Stations: In one shallow bowl, combine the all-purpose flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk until smooth. In a third bowl, place the crushed BBQ-flavored potato chips.

Coat the Chicken: Dredge each piece of chicken in the flour mixture, making sure to coat it well. Shake off any excess flour, then dip it into the egg and buttermilk mixture. Finally, coat the chicken in the crushed BBQ chips, pressing gently to adhere the chips to the chicken.

          Cook the Nuggets:

            - For Baking: Place the coated chicken nuggets on the prepared baking sheet. Lightly spray the tops with cooking spray and bake for 15-20 minutes, or until golden brown and cooked through, flipping halfway through.

              - For Frying: Heat about 1/4 inch of vegetable oil in a skillet over medium heat. Once hot, carefully add the chicken nuggets in batches, frying for about 3-4 minutes per side or until golden and cooked through. Remove and place on paper towels to absorb excess oil.

Serve: Allow the nuggets to cool for a few minutes before serving. Pair them with your favorite dipping sauces, like ranch, BBQ, or honey mustard.
