1.5 lbs boneless, skinless chicken thighs (cut into 1.5-inch pieces)

1 large red bell pepper (cut into 1-inch pieces)

1 large yellow onion (cut into wedges)

1 medium zucchini (sliced into half-moons)

1 cup pineapple chunks (fresh or canned)

1/4 cup olive oil

1/4 cup soy sauce

1/4 cup honey

2 tablespoons apple cider vinegar

2 cloves garlic (minced)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon black pepper

1/2 teaspoon salt

Fresh cilantro (for garnish, optional)

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions
 

Prepare the Marinade: In a large mixing bowl, whisk together olive oil, soy sauce, honey, apple cider vinegar, minced garlic, smoked paprika, cumin, salt, and black pepper until well combined.

    Marinate the Chicken: Add the chicken pieces to the bowl with the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour (or up to overnight for maximum flavor).

      Prepare the Veggies: While the chicken is marinating, chop the red bell pepper, onion, zucchini, and pineapple into bite-sized pieces. Set aside.

        Skewering Time: Once the chicken has marinated, preheat your grill to medium-high heat. Thread the marinated chicken pieces onto the skewers, alternating with the veggies and pineapple chunks to create a colorful presentation.

          Grill the Skewers: Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F or 75°C).

            Serve: Once cooked, remove skewers from the grill and let them rest for a few minutes. Garnish with fresh cilantro if desired and serve with your favorite dipping sauce or over a bed of rice.
